The proteins in nutritional yeast are considered highly digestible. It is also high in B-complex vitamins including riboflavin, niacin, thiamine, vitamin B6 and folate. A one tablespoon serving of nutritional yeast contains 2 mg of riboflavin or 160% of the RDI. It is also a good source of minerals like selenium, copper and manganese. Nutritional yeast does not contain gluten and is low in carbs.
